Fish Nuggets

Your family will love this yummy snack and you will love it as it is very quick and simple to make Ingred ients Sole fish - 250 gms  Garlic paste - 2 tsp Green Chili paste - 2 tsp  Salt  Lemon - 1 Cornflour - 2 tbsp Bread crumbs -  one cup Oil to fry Met hod Cut sole fish into 2 inch cubes Marinate with garlic paste, chili paste salt and lemon juice  Keep aside for 10 to 15 minutes  Now add cornflour in fish and mix well  Put bread crumbs in a large plate . Add fish cubes in it and lightly role and shake. Crumb should cover the fish cubes Heat oil and fry 10 to 12 pieces at a time  Serve hot with mayonnaise or mustard

Assam - Til Diya Murgir Manxo ( Chicken with Black Sesame )

Picked up this recipe from some special dishes of Assam.   A simple curry yet with a distinct flavour of black sesame is something new.  I was actually amazed by the beautiful colour black sesame gives to this dish. Ingredient  Chicken Boneless -  1 KG  Onion -   4 medium  Ginger -  2 Inch  Garlic -  8-10 cloves Black Sesame - 3 Tablespoon Whole Black Paper - 10- 12 Black Paper Powder - 2 Tsp  Mustard oil -  1/2 Cup  Green chilies -  2-3  Lemon - 1 /2  Salt  Sugar - 2 tea spoon Method Clean and cut chicken in 2 Inch pieces. You may also take joined chicken or chicken drumsticks if you like  Make paste of 2 onion, ginger and garlic  Finely chop remaining 2 onions Marinate chicken with onion-ginger-garlic paste, salt, black paper powder and 1 table spoon mustard oil. Keep aside of  30 minutes  Once chicken is marinated,  heat oil in a wok.  Add sugar and let it caramelize for 2 mins , then add chopped onions  Fry till golden brown Add chicken

Fried Chicken Wontons

Who does not love crispy wontons. They are such amazing snack that irrespective of how much quantity you cook , you will never have a left over .   Ingredients  Minced Chicken - 500 Gms  Onion - Finely chopped -  1 cup  Sprint Onion - Finely chopped - 1 cup  Soy sauce - 2 tsp  Salt to taste  Black Paper as per taste  Wonton sheets (Square) -  40-50  Egg - 1  Oil  to fry  ( Approx 3 cups )  Method  Take minced chicken , add finely chopped onion , spring onion , soy sauce , salt and paper   Mix well all the ingredient and this will be your filling .  In 1/2 cup water add one egg and beat well to make your egg wash   Now for making wontons , take your wonton sheet (  Take them out of refrigerator at least 45 minutes before making wonton )  . Always keep them covered with a wet cloth or  plastic wrap   Take a sheet and put 1 tsp of filling at the center .  Do not add too much filling otherwise the wontons may burst while frying 

Arunachal Pradesh - Vegetable Thukpa

This simple and healthy noodle and vegetable soup , comes from eastern most state of India i.e Arunachal Pradesh .   A good fit on a cold winter night . Ingredient  Ginger paste - 1 tsp Garlic paste - 1tsp Spring onion - 1/2 bowl Mushrooms - 4-5 pieces  Capsicum -  1  Carrot - 1 Beans -  10-12  Bok choy - 2  Salt to taste  Black paper - as per taste  Soy sauce - 2 tsp  Rice noodles - 50 to 60 Grams  oil - 1 tbsp Method  Boil rice noodles as per the directions in the pack (suggest that add some salt in boiling water )  Drain and add cold water and drain again  Keep aside  Dice all the vegetables   Heat oil in a deep pan and add ginger garlic paste and saute for one minute  Add all the vegetables  and season with  salt and paper  Saute for 3-4 minutes  Add  4-5 cups of water  Cover and let it cook for 7-8 minutes or till vegetables are cooked ( but not mushy )  Add soy sauce and adjust seasoning as per your taste  In a serving bowl ad

Green Sole Fry

A quick snack of sole fillets with full of  coriander flavor .  An easy dish , without much effort , when you want to serve something delicious after a long day of work.   Ingredient  Sole fish fillets - 500 Gms , 2 inch slices  Coriander leaves - one handful  Green Chilies -  3 to 4  Garlic -  8-10 cloves Lemon Juice -  2 Tbsp All purpose flour - 1/2 cup  baking powder - 1/2 tsp Egg - 1  Salt to taste  oil to deep fry  Method Grind coriander leaves , chili and garlic to  a smooth paste  Marinate fish filet with the coriander paste , salt and lemon juice . Keep aside for 15 -20 minutes  Make a batter with flour , egg , baking powder , salt and little water .  Keep it of medium consistency  Heat oil in a deep pan  Dip marinated fish filet into the batter and deep fry on high heat till golden brown Serve hot   Tip :   If there is any left over marinate and batter mix them and just make small fritters with the help of a spoon .  You will get

Andhra Pradesh : Natu Kodi Kura - Andhara Style Chicken Curry

This is a Andhra Style Chicken curry .  It has some of my own tweaks , but still having the authentic flavour .  A simple chicken dish with beautiful aroma of spices . Goes well with steamed rice , roti or paratha .  Ingredient  Chicken boneless - 1 KG  Onion - 2 medium  Ginger Paste - 1 Tbsp  Garlic Paste - 1 Tbsp  Green Chili -  3 or 4  Red Chili powder - 1 tsp Turmeric - 1 tsp  Curry leaves - 1 handful  Salt to taste  Poppy seeds -  1 Tbsp  Cashew nuts -  2 Tbsp   Milk - 1/4 cup  Oil -  3 Tablespoon Curry Paste Coriander seeds -   2 Tablespoon  Grated Coconut - 2 Tablespoon  Clove - 2-3  Cardamom - 2 -3   Cinnamon - 1 inch piece  Red Chili whole - 2  Turmeric - 1 Tsp  Garlic - 4 to 6 cloves  Ginger - 1/2 inch  curry leaves -  5-6 Method Dry roast all the ingredient for curry paste  for 3 to 4 minutes .  This paste is key to this dish which brings beautiful aroma  Let it cool  then  grind with little paste till a smooth pas

Quick Chicken Drumstick Roast with Baby Potatoes and Caramelized Carrot

This recipe is improvised version of chicken roast to make it much quicker for working women's .  All you need is around 45 minutes to make this .   Ingredient  Chicken Drumsticks -  12  Lemon - 1 Garlic Paste - 1 tablespoon  Dried Rosemary - 1/2 tea spoon  Dried Basil - 1/2 tea spoon  Salt to taste  Sugar - 1 tea spoon Red chili flakes - 1 tea spoon  olive oil  -  3 table spoon  Baby Potatoes -  12  Carrot 1 ( Cut in thin slices )  or Baby Carrots - 12  Fresh Basil for Garnish  Method Prepare a marinate by mixing  lemon Juice , herbs , salt , chili flakes , garlic paste and 2 table spoon olive oil  Add marinate mix to chicken mix well and keep aside for five minutes  Cut baby potatoes in half length wise  Cut carrot  in thin slices ( no need to cut if using baby carrot )  Preheat oven in convection for 10 minutes  Meanwhile cover chicken by a cling film and microwave for 5 minutes  In a greased baking tray ,  put chicken taking out from marinat

Schezwan Crispy chicken wings

Ingredients Chicken wings  - 8 Garlic paste - 1 table spoon Salt to taste Cornflour -  1/2 cup Egg - 1 Oil - 1/2 cup Onion - 1 Capsicum - 1 Schezwan Sauce - 2 table spoon Method 1.  Marinate chicken wings with garlic paste and salt for 15 mins . 2.  Cut big square pieces of onion and Capsicum 3.  Seal chicken wings in glass bowl with cellophane paper  and microwave for 5 - 6 minutes .  Chicken will get moderately cooked 4. Add one egg and cornflour in chicken And mix well so that chicken is properly coated 5. In a shallow pan , heat the oil . 6. Place chicken pieces in pan after dripping off extra batter 7. Fry from one side for 3-4 minutes and then flip over 8. When golden brown from both sides ,  remove chicken from pan 9. In same pan sauté onion and Capsicum for 2 minutes  . Add chicken and schezwan sauce 10. Stir fry for 1 minute and then remove from heat 11.  Serve as a snack or with noodles

Cold pasta Salad

COLD PASTA SALAD This dish is very easy to make and can be a healthy and light dinner specially in summers  Ingredient  Farfalle Pasta  -  500 Gms Cucumber  -  1 (Finely Chopped ) Green Bell Pepper -  1 (Finely Chopped ) Pineapple  -  100 Gms  Fresh  or  4 Slices from Tinned  Cherry Tomato  - 100 Gms  Mushroom  -  200 Gms   ( Chopped in Thin slices  ) Sweet Corn -  1/2 Cup  Spinach  -   1 Cup (Finely Chopped ) Granny Smith Apple  -  1  (  Chopped in thin slices ) Garlic paste  -  1 Tablespoon  Olive oil  -  3 Tablespoon  Pasta Sauce -  3 Tablespoon  Mixed herbs ( Basil , Thyme , Oregano )   -   2  Tsp each  Salt  to taste  Black pepper -  1 tea spoon  Red chill flakes -  2 tablespoon  Sugar - 1 tablespoon Method   Spread cherry tomatoes with some olive oil  , salt and basil  and  grill for  5-6 minutes in oven ( you may also saute in a pan )    Grill or  saute  mushrooms with a sprinkle of salt for  2-

Chicken Pizza

Chicken pizza   Ingredient  For Base All purpose flour  (maida) - 500 gms Active yeast - 1 sachets  (7 gm ) Salt - 1 tea spoon Sugar - 1 table spoon Olive oil - 1/2 cup For Topping Boneless chicken - 250 Gms Onion -  1 Capsicum - 1 Tomato - 1 Green chillies Corn Garlic  - 10 cloves Basil Oregano Chilli flake Pizza Sauce Mozzarella cheese  - 2 cup Cheddar cheese - 1 cup Olive Oil -  1 Tablespoon Method Dough for base 1.  Heat 1 cup water and 1 tea spoon sugar to lukewarm 2.  Add active yeast in water , put lid and leave for 5 mins 3.  Take flour in a big bowl or plate . 4. Add olive oil ,  salt and remaining sugar 5. Add yeast and make a dough 6. Add more water if needed 7. Once a soft dough is formed,  put it in big airtight container and keep in warm place for 2 hours 8.
