Cold pasta Salad

COLD PASTA SALAD

This dish is very easy to make and can be a healthy and light dinner specially in summers 

Ingredient 


Farfalle Pasta  -  500 Gms

Cucumber  -  1 (Finely Chopped )

Green Bell Pepper -  1 (Finely Chopped )

Pineapple  -  100 Gms  Fresh  or  4 Slices from Tinned 

Cherry Tomato  - 100 Gms 

Mushroom  -  200 Gms   ( Chopped in Thin slices  )

Sweet Corn -  1/2 Cup 

Spinach  -   1 Cup (Finely Chopped )

Granny Smith Apple  -  1  (  Chopped in thin slices )

Garlic paste  -  1 Tablespoon 

Olive oil  -  3 Tablespoon 

Pasta Sauce -  3 Tablespoon 

Mixed herbs ( Basil , Thyme , Oregano )   -   2  Tsp each 

Salt  to taste 

Black pepper -  1 tea spoon 

Red chill flakes -  2 tablespoon 

Sugar - 1 tablespoon

Method 

  1.  Spread cherry tomatoes with some olive oil  , salt and basil  and  grill for  5-6 minutes in oven ( you may also saute in a pan ) 
  2.  Grill or  saute  mushrooms with a sprinkle of salt for  2-3 minutes . 
  3. Blanch /Boil  Spinach 
  4.  Boil  2 litre water in a large vessel  with  2-3 table spoon salt 
  5.  Add pasta and boil till cooked ( keep it Al dente )
  6.  Drain water and toss with  1 tablespoon of olive oil
  7.  cool  for  10-15 minutes , then keep in refrigerator for  30 minutes  or more 
  8. In a large mixing bowl ,  put remaining olive oil
  9.  Add Garlic paste , All herbs ,  chilly flake , black pepper  and sugar 
  10.  Put it in Serving bowl , top with cherry tomatoes 
  11.  Add pasta sauce  and mix well 
  12.  Now add all the vegetables except tomatoes
  13.  Add Pasta mix well 
  14.  Check seasoning and balance it 
  15. Refrigerate at least 15 minutes before serving 
  16.  Serve with Garlic bread or  any bread of your choice
