Arunachal Pradesh - Vegetable Thukpa

This simple and healthy noodle and vegetable soup , comes from eastern most state of India i.e Arunachal Pradesh .   A good fit on a cold winter night .



Ingredient 

  • Ginger paste - 1 tsp
  • Garlic paste - 1tsp
  • Spring onion - 1/2 bowl
  • Mushrooms - 4-5 pieces 
  • Capsicum -  1 
  • Carrot - 1
  • Beans -  10-12 
  • Bok choy - 2 
  • Salt to taste 
  • Black paper - as per taste 
  • Soy sauce - 2 tsp 
  • Rice noodles - 50 to 60 Grams 
  • oil - 1 tbsp

Method 

  • Boil rice noodles as per the directions in the pack (suggest that add some salt in boiling water ) 
  • Drain and add cold water and drain again 
  • Keep aside 





  • Dice all the vegetables  
  • Heat oil in a deep pan and add ginger garlic paste and saute for one minute 
  • Add all the vegetables  and season with  salt and paper 
  • Saute for 3-4 minutes 
  • Add  4-5 cups of water 
  • Cover and let it cook for 7-8 minutes or till vegetables are cooked ( but not mushy ) 

  • Add soy sauce and adjust seasoning as per your taste 
  • In a serving bowl add 1/4 portion of rice noodles and then pour soup and vegetables 
  • Serve hot
