Arunachal Pradesh - Vegetable Thukpa
This simple and healthy noodle and vegetable soup , comes from eastern most state of India i.e Arunachal Pradesh . A good fit on a cold winter night .
Ingredient
- Ginger paste - 1 tsp
- Garlic paste - 1tsp
- Spring onion - 1/2 bowl
- Mushrooms - 4-5 pieces
- Capsicum - 1
- Carrot - 1
- Beans - 10-12
- Bok choy - 2
- Salt to taste
- Black paper - as per taste
- Soy sauce - 2 tsp
- Rice noodles - 50 to 60 Grams
- oil - 1 tbsp
Method
- Boil rice noodles as per the directions in the pack (suggest that add some salt in boiling water )
- Drain and add cold water and drain again
- Keep aside
- Dice all the vegetables
- Heat oil in a deep pan and add ginger garlic paste and saute for one minute
- Add all the vegetables and season with salt and paper
- Saute for 3-4 minutes
- Add 4-5 cups of water
- Cover and let it cook for 7-8 minutes or till vegetables are cooked ( but not mushy )
- Add soy sauce and adjust seasoning as per your taste
- In a serving bowl add 1/4 portion of rice noodles and then pour soup and vegetables
- Serve hot
