Quick Chicken Drumstick Roast with Baby Potatoes and Caramelized Carrot

This recipe is improvised version of chicken roast to make it much quicker for working women's .  All you need is around 45 minutes to make this .  


Ingredient 

  • Chicken Drumsticks -  12 
  • Lemon - 1
  • Garlic Paste - 1 tablespoon 
  • Dried Rosemary - 1/2 tea spoon 
  • Dried Basil - 1/2 tea spoon 
  • Salt to taste 
  • Sugar - 1 tea spoon
  • Red chili flakes - 1 tea spoon 
  • olive oil  -  3 table spoon 
  • Baby Potatoes -  12 
  • Carrot 1 ( Cut in thin slices )  or Baby Carrots - 12 
  • Fresh Basil for Garnish 

Method

  • Prepare a marinate by mixing  lemon Juice , herbs , salt , chili flakes , garlic paste and 2 table spoon olive oil 
  • Add marinate mix to chicken mix well and keep aside for five minutes 
  • Cut baby potatoes in half length wise 
  • Cut carrot  in thin slices ( no need to cut if using baby carrot ) 
  • Preheat oven in convection for 10 minutes 
  • Meanwhile cover chicken by a cling film and microwave for 5 minutes 
  • In a greased baking tray ,  put chicken taking out from marinate and lightly brush with oil 
  • Put in convection for 10 -15 minutes at 180 degree
  • Put baby potatoes in same marinate mix , add little salt , cover with cling film and microwave for 5 minutes 
  • Once chicken in done in oven , take it out flip them with a tongue , put potatoes in same tray 
  • Now change oven settings to Grill ,  put the baking tray and grill  for 5-7 minutes till good golden brown colour 
  • Again take out baking tray , flip chicken and again grill for another 5 minutes 
  • in a grill pan , add little oil ( or butter )  , put carrot Salt and Sugar and toss for 2 -3 minutes , till caramelized 
  • Take out chicken and potato in serving dish , top up with carrots and fresh basil 
  • Serve hot
