Kerela Style Pomfret Fry
Beautiful state of Kerela has so much to offer in the culinary world . Starting from appam , to chemmeen curry , from the simple delicacies to the lip smacking spicy food , it has an awesome food spread to offer . I chose to make a spicy pomfret fry and it was an instant hit in family .
Ingredient
- Pomfret - 6
- Small onions - 8
- Garlic - 8-10 cloves
- Ginger - 1 inch
- Green Chili - 7-8
- Red chili powder - 1 tea spoon
- Kashmiri chili powder - 1 tea spoon
- turmeric - 1 tea spoon
- Salt as per taste
- Tamarind paste - 1 tablespoon
- Curry leaves - 8-10 leaves
- All purpose flour or Corn Flour - 3 tablespoon
- Oil - 1 cup
Method
- You need to keep the pomfrets whole . With a cut under the head you can clean it and have slits on the body both the sides . Tell your fish seller , they will cut and slit accordingly and also clean it from inside
- Put all the spices , onion , ginger , garlic ,curry leaves , tamarind paste and salt in a grinder . Add half a cup water and grind it to a smooth mixture
- Add flour to it
- Now take a fish and spread the spices nicely , filling lightly into slit . cover all the fishes with spices in similar way
- Keep in an airtight container and put in refrigerator for 4-6 hours . ( At least 2 hours is required )
- In a shallow pan , heat oil and carefully place one fish . Fry on high flame . When one side is done ( should take around 2-3 minutes ) , carefully flip it over and fry other side .
