Punjab : Amritsari Kulcha
Punjab , a state full of life and good food is an integral part of day to day life . Though there are plenty of dishes to choose from , I have picked up a dish here which is absolute favourite of my family . Amritsari Kulcha is an easy to make , lip smacking stuffed bread .
Ingredients
For Dough
- All purpose flour (Maida) - 500 Gms
- Curd - 1/4 Cup ( 4 Tablespoon )
- Baking powder - 1/2 tsp
- Baking soda - 1/2 tsp
- Oil - 1 cup
- Sugar - 2 tsp
- Salt - As per taste
For Filling
- Boiled Potato - 4-6 medium
- Green Chili - 5-6 Finely Chopped
- Ginger - 1.5 inch grated
- Dry Ginger - 1 tsp
- Amchur Powder ( Dry Mango Powder )- 1 tsp
- Salt - As per taste
- Bhuna Masala - 1 tsp
Hint : For making bhuna masala , dry roast 4-5 cloves , 4-5 green cardamom , 1 inch cinnamon , 1 tsp coriander seeds , 1 tsp cumin seeds , 2-3 dry red chili . Once roasted dry grind and store in a air tight container .
For Frying
Kasoori Methi - a handful
Dry flour - 1/2 cup
Ghee - 1 cup
Method
- For dough , mix all the ingredients and make a soft dough . mostly it should not need any water but you can add few drops it it is dry
- Oil a large bowl , roll your dough into it and cover it with a cling film and keep aside for 2-3 hours
- Now for the filling mash boiled potato . Add all other ingredients and mix well so that there is no lump
- Now divide dough and potato in 12 -15 equal portion
- Take one portion of dough and make a ball , roll it to a small chapati . Put one portion of potato mix on it and close the ball from all sides .
- Roll it lightly to a circle of 3-4 inch diameter with the help of little dry flour . Do not try to make it a very big circle other wise it may break . sprinkle few shreds of kasuri methi and roll once again
- Put it on a hot griddle , gradually add ghee and fry on slow heat for 1 minute . Flip over and fry till golden brown from both sides
- Serve with Spicy Punjabi Chhole
